This is my first contribution to SWC-Andhra Pradesh hosted by Haripriya of Indian Hut blog. This is the simplest item that can be tried from Andhra Pradesh cuisine and a very satisfying one. Here you go..
You Need,
Toor/Tuvar/Splick pigeon Peas - 1 cup
Chopped Amaranth leaves - one fist ful (I had only little, you can use more or add any other veggie)
Onion-1 chopped into 1" cubes
Garlic - 2 pods (chopped)
Ginger- 1" piece
Green Chillies-4 (adjust according to your taste)
Turmeric
Tamarind Juice - 2tbsp (you can add more if you want it sour, adjust accordingly)
Pressure cook all the above items for 4 whistles. You can cook dal and other ingredients separately and mix them once they are cooked.
With the back of a spoon or a hand blender, blend it to mix the content. Do not mash it up.
Now add tadka or tampering.
For Tampering you need:
Oil-2tsp
Mustard seeds-1/2tsp
Chanadal and urad dal mix -1tsp (optional)
Red Chilles - 1 broken into 1/2"pieces
Curry leaves- from 1 line
Heat oil, add mustard seeds. When mustard stops spluttering, add chanadal & urad dal mix fry it till it is golden brown. Add red chillies and curry leaves and switch off the stove.
Pour this tampering mixture over the mixed dal and veg mixture and boil it further for next 2 mins. Check and adjust the taste . Serve hot with plain rice.
