Veg Momos & Spicyhot Chilli Chutney~ A distant cousin of Kadubus

Have you heard of Wantons, Momos etc? They are in a way distant cousins of our Kadubus or Modaks. Modaks have vegetarian fillings while Wantons and Momos can be made in vegetarian versions. Wantons are popular here in East Asia, while Momos are popular in East India. East, East..??

Here is how I made Veg Momos.

Steamer (Idli steamer, rice cooker or bamboo steamer would do well).
I have used electric rice cooker with a steamer plate inserted into it.

Ingredients :

Easy Way - Buy Wanton Skin from super markets.
I did not do that. I love making everything from scratch ;)

Skin of Momos :
Maida or All Purpose Flour - 1 cup
Salt - little
Water
Add salt and water to the flour and mix well to make a tight dough.

Pinch a grape size dough and roll them into circles. They must rolled to make very thin sheet.
Keep them ready.

Filling:

Cabbage - 1 small size
Mixed vegetable - Used frozen mix vegetable - 3 tbsp
Chilli Paste - 1/2 tbsp
Ginger garlic paste - 1/2 tbsp
Salt
Oil - 1tbsp

1. Cut cabbage, defrost the mixed vegetable and keep it ready.
2. Heat oil in a pan, add in ginger garlic paste. Fry for 2 seconds and pour in chopped cabbage to your pan. Add in mixed vegetables.
3. Cabbage has lot of moisture in it. Fry Cabbage till the moisture evaporates and the mixture is dry.
4. Add salt and chilli paste and mix well. Fry for 2 more mins and switch off the stove.
5. Transfer the filling to a plate and let the filling cool down a bit.

Assemble them
1. Place the filling in the center of the skin you have rolled out.
2. Easy way is to fold the two sides of the circle and pinch them together.
3. You can be little adventurous and gather the half of edge of the circle like how we plate the saree ;)
When you are done with it, it just looks like money purse :)

4. While you are busy making these money purses, take a 2 min time off to set your steamer ready. You can even arrange these on your idli plates and steam them like idlis. Which ever steamer you wish to use, add water into it and keep it on the stove for the water to boil.
5. Grease the steamer plate very well.
6. Place these 'money purses' in the steamer.
7. Steam them for 10 mins or till you see the skin is transparent.
8. Serve hot with Red Chilli & Tomato Chutney.

Spicy Hot Chilli Chutney :

Ingredients :
Tomatoes - 2 big
Red Chillies - 8
Ginger - 1" piece
Garlic - 2 cloves
Salt
Sugar- a big pinch

Method:
1. Soak red chillies in hot water for 30 mins.
2. Chop tomatoes, ginger and garlic.
3. Take all the ingredients in a mixer grinder and grind to a smooth paste.
4. Check salt in chutney before you transfer it to a bowl. Add more if required and blend again.
5. Transfer it to a container and serve it with Momos. Done!

Enjoy with your coffee or tea. Ruchikara haagu Aarogyakara :)
