Ragi Mudde needs no introduction to Karnataka people. It is a finger millet porridge which is dunk in spicy leafy green sauce and enjoyed without chewing.
I have made a video on how to mix mudde and a collage on step by step process.
Step 1: Keep 2.5 cups water and 1 tsp of salt on the stove. When water is luke-warm, take out 1 cup of water and keep it aside. Let the rest of of water continue to boil.
Step 2: Mix about 1 cup of water with 1 cup of finger millet (ragi) flour in a spearate bowl. Mix well. There should not be any lumps.
Step 3: When water starts to boil, lower the heat and slowly start adding the ragi flour mixture to the water. This step is very important. Keep stirring. If you are not careful, lumps will form. Keep stirring and mixing gently untill all water and flour mixes well and comes together as a ball. Switch off the stove. Cover the bowl and let it stand for 5-7 mins.
Step 4: Laddle a big spoon to a wet plate. Wet your palm and make a nice ball out of this dough. Serve it warm with a dollop of ghee on top and your favorite curry to a side. Enjoy!
