Simple Potato Fry with Kobbari Pudi

A simple potato fry which you can put together using fewer ingredients from your pantry.
 
Ingredients :
 
KObbari Pudi/Coconut Powder
Dry Coconut - 3-4 Tbsp
Salt as needed
Red Chili Powder - 1Tbsp
Garlic Clove - 4
Tamarind - a small piece
Jaggery - a small piece
 
Potatoes-  4- Peeled and cubed and rinsed well in water. Put it on a towel and pat it dry.
Oil - 3 Tbsp for frying
 
Heat oil in a thick bottomed non-stick pan. Add 'pat dried' potato and fry till they don't stick to each other. Takes little time and patience, but it's worth all that work.
 
Grind salt, chili powder, garlic, jaggery and tamarind in mixer grinder and grind it without adding water. Add grated dry coconut and grind again to get a garlic flvored kobbari pudi. Fragrant Pudi, it is! :)

Add this powder to fried potato and fry it further till powder coats potato very well.

Here is how I packed it off with my chapathi. It goes well with rice and rasam too.
