A chutney which is unique in flavor and a combination of flavors from pungent onion and sweet tasting coconut is truely awsome!
Onion & Coconut Chutney

Serves : 4-8 people

Ingredients:
Onions:
3 medium sized
Grated
fresh Coconut- 4-5 Tbsp
Roasted Chickpea (hurgadle or pottukadalai) - 1Tbsp
Red
Chilies : 5 (3 byadgi+2guntur)
Tamarind
Extract: 2tsp
Jaggery/brown
sugar: 1tsp
Salt
for taste
Oil:
for frying
Mustard,
Curry Leaves for Oggarane
Method :
1.
Peel onions and cut them into rough cubes
of 1” size.
2.
Heat 1 tsp of oil in a pan fry red chili
and onion till chili plumps and onions get coated with oil and become warm.
3.
Cool the above mixture, add coconut, hurgadale/pottukadali, tamarind
extract, j aggery/brown sugar, salt and grind in a mixer grinder to smooth
paste without using water.
4.
Heat 1 Tbsp of oil in the same pan as used
before. Add mustard seeds. Once it stops spluttering, add curry leaves and
ground chutney. Switch off the stove and remove the pan from heat and keep it
aside. Check salt and adjust the flavors. Let it cool before you serve it with Rava
dose, pongal etc.
