Thondekayi Palya
Simple palya for busy days. Few things from your kitchen and you have tasty palya!
Ingredients :
Thondekayi - 25 (It is also called Ivygourd, Tindora, Tinda, Dondakaya, Tendli)
Onion- 1
Huli Pudi (Sambar Podi)- 2tsp
Tamarind Juice- 1tsp
Salt
Jaggery- little
Grated Coconut- 1Tbsp
Oil, mustard, urid dal, turmeric, curry leaves.
Method :
Clean and cut thondekayi. Cook it till tender. Edited to add :I pressure cooked it. You can cook it on stove top or in a pressure cooker for 2 whistles.
Cut onions lengthwise. Grate coconut and keep it aside.
Heat 2 tsp of oil. Add mustard seeds, wait till mustard stops popping, Add urid dal and curry leaves. Fry till urid dal turns pale brown. Throw in the onions and fry till transcluscent. Add in tamarind juice, jaggery, salt, huli pudi, grated coconut and 2 Tbsp water. Fry for 20 sec. Add in cooked thondekayi pieces. Mix till masala coats the palya. Sprinkle more water so that masala gets coated well. Check the taste, adjust the flavors. Switch off the stove and keep it aside for the flavors to settle down. Serve warm with rice.
